The higher you go, the sooner water boils: roughly one degree less for every three hundred metres. For tea, that matters.
- Warm your teaware longer: you can pour boiling water over the outside of the gaiwan too, and its walls will hold the heat.
- Keep the lid on while the tea steeps. Take it off as soon as you finish pouring, so the leaf doesn't “stew”.
- A little more leaf: it makes up for what the water can't give.
- A slightly longer steep. Green and white teas hardly notice: even by the sea they only need 70–90 °C.
