White tea: the leaf they barely touch
The least handled tea of all. It is not pan-fired, not rolled, not roasted: it is left to wither and then dried. That is it.
That is why it tastes like nothing else: soft, honeyed, like dried flowers, with no harshness anywhere. The colour in the cup is almost clear, and that misleads — it looks weak and is in fact the most delicate one to read. It is drunk slowly.
We have three. Silver Needle from Fuding is buds alone with their silver down: the most classic white there is. The two Peruvians, Santa Paca and Santa Paca with flowers, come from Huyro in the La Convención Valley, Cusco — the same place our Peruvian red and green grow.
It is the tea for the end of the day: soft, with no edge to it anywhere. If you were looking for chamomile to slow things down once it gets dark, this is the one that does that job, and it tastes better.

How to brew white tea
It takes more than you would think: buds release slowly, which is why white tea almost never turns bitter.
A little hotter than green, because the bud is whole and closed. Not boiling: the perfume goes.
A heaped tablespoon per cup. Buds take up volume and weigh little; too little leaf and you get water.
White forgives: forget it for an extra minute and it will not be ruined the way green would.
It goes further than any of the others. And cold-brewed overnight in a jug, it is one of the best there is.
All tea comes from one plant: Camellia sinensis
The type of tea is set not by the plant variety but by the technique: how long the leaf oxidised, how that was stopped, how it was rolled, roasted and aged. The same leaf becomes white or pu-erh: the difference is the master's hands and the hours. Tap a type and we'll show what's on the shelf.
